- Line a large baking sheet completely with parchment paper or wax paper, ensuring edges overlap to prevent sticking. Set aside near your workspace.
- Combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave on high power for 30 seconds, then stir thoroughly. Continue microwaving in 20-second intervals, stirring between each, until chocolate becomes completely smooth and glossy. Alternatively, melt over a double boiler, stirring constantly until melted.
- Using a dinner fork or specialized chocolate dipping tool, gently spear a Peep from the side. Lower into melted chocolate, turning to submerge completely. Lift slowly, allowing excess chocolate to drip back into bowl for 3-5 seconds. Tap fork gently against bowl edge to remove drips.
- Carefully slide coated Peep onto prepared parchment paper using a second fork or small offset spatula. Work quickly to complete remaining Peeps while chocolate remains fluid and workable.
- Immediately sprinkle desired toppings onto wet chocolate while still tacky. Press decorations lightly with fingertips to ensure adherence. For nut coatings, gently roll the chocolate-coated Peep in crushed nuts.
- Transfer baking sheet to refrigerator. Chill for 20-30 minutes until chocolate coating is completely firm and no longer sticky to touch. Peeps are ready when they release easily from parchment paper.
- Serve chilled for firm texture or allow to come to room temperature for softer bite. Store in an airtight container between layers of parchment paper in refrigerator for up to 1 week.
