01 - Preheat oven to 375°F. Line baking sheet with parchment paper.
02 - Whisk flour, cornmeal, baking powder, chili powder, cumin, smoked paprika, garlic powder, onion powder, and salt in large bowl.
03 - Add olive oil and water to dry mixture. Mix until dough forms. Add more water if too dry.
04 - Roll dough to 1/8-inch thickness on lightly floured surface.
05 - Cut dough into 1-inch squares with knife or pizza cutter.
06 - Transfer to baking sheet. Sprinkle with cheddar cheese and oregano if desired.
07 - Bake 12–15 minutes until golden and crisp. Cool 5 minutes on baking sheet.
08 - Transfer to wire rack to cool completely. Store in airtight container up to one week.
