01 - In a small saucepan over medium heat, whisk together almond milk, heavy cream, cocoa powder, and chopped dark chocolate until fully incorporated.
02 - Stir continuously for 3-4 minutes until chocolate melts completely and mixture becomes smooth and steaming. Do not allow to boil.
03 - Add powdered erythritol, vanilla extract, and sea salt. Whisk vigorously until sweetener dissolves completely and hot chocolate reaches silky consistency.
04 - Taste mixture and add additional sweetener if desired to achieve preferred sweetness level.
05 - Pour into warmed serving mugs. Top with sugar-free whipped cream and shaved chocolate if using. Serve immediately while hot.
