Sheet Pan Sausage Peppers (Printable)

Juicy sausages roasted alongside sweet bell peppers, onions, and aromatic herbs in one pan.

# What You'll Need:

→ Sausage

01 - 4 Italian sausages (pork or chicken, about 14 ounces total)

→ Vegetables

02 - 2 large bell peppers, any color, sliced
03 - 1 large red onion, sliced
04 - 2 cloves garlic, minced

→ Seasonings

05 - 2 tablespoons olive oil
06 - 1 teaspoon dried oregano
07 - 1 teaspoon dried basil
08 - 1/2 teaspoon crushed red pepper flakes
09 - 1/2 teaspoon kosher salt
10 - 1/4 teaspoon black pepper

→ Optional Garnishes

11 - 2 tablespoons chopped fresh parsley
12 - Freshly grated Parmesan cheese

# Directions:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper or foil for easy cleanup.
02 - In a large bowl, combine the sliced bell peppers, red onion, and minced garlic. Drizzle with olive oil, and sprinkle with oregano, basil, red pepper flakes, salt, and black pepper. Toss to coat evenly.
03 - Spread the vegetables evenly on the prepared baking sheet. Nestle the sausages among the vegetables.
04 - Roast in the preheated oven for 25 to 30 minutes, turning the sausages and stirring the vegetables halfway through, until the sausages are cooked through (internal temperature 160°F) and the vegetables are tender and slightly caramelized.
05 - Remove from the oven and let rest for a few minutes. Slice the sausages if desired and sprinkle with fresh parsley and Parmesan. Serve hot.

# Expert Tips:

01 -
  • Everything cooks on one pan so cleanup is practically nonexistent
  • The vegetables become meltingly tender while the sausages get perfectly browned
  • It's flexible enough to work with whatever sausage you have in the fridge
02 -
  • Crowding the pan is actually fine here since the vegetables release moisture as they cook
  • Stirring halfway through prevents the vegetables from burning and helps them cook evenly
03 -
  • Different colored peppers make the dish more vibrant and slightly sweeter
  • If your sausages are especially thick, give them an extra 5 minutes in the oven
