01 - Place pineapple chunks and lime juice into a blender. Puree until completely smooth and set aside.
02 - In a mixing bowl, whisk together coconut milk, coconut cream, maple syrup or honey, and lime zest until fully combined.
03 - Spoon alternate layers of pineapple puree and coconut mixture into popsicle molds. Use a skewer to gently swirl for a marbled look.
04 - Insert popsicle sticks into the molds. Freeze for at least 4 hours or until solid.
05 - Run the outside of the molds briefly under warm water. Carefully remove the popsicles.
06 - Serve immediately for best texture.
