01 - Whisk together olive oil, lemon juice, lemon zest, minced garlic, smoked paprika, salt, black pepper, and chopped parsley in a large bowl until well combined.
02 - Add shrimp to the bowl and toss thoroughly to coat. Cover and refrigerate for 10–30 minutes to allow flavors to penetrate.
03 - Preheat grill or grill pan to medium-high heat. If using wooden skewers, soak in water for at least 15 minutes to prevent burning.
04 - Thread marinated shrimp onto skewers, placing 4–5 shrimp per skewer.
05 - Cook skewers for 2–3 minutes per side until shrimp turn opaque and develop light char marks.
06 - Remove from grill and transfer to a serving platter. Garnish with lemon wedges and additional parsley if desired. Serve immediately.
