01 - 4 large whole wheat tortillas or flatbreads
02 - 1 1/2 cups classic hummus (store-bought or homemade)

03 - 1 cup baby spinach or mixed greens
04 - 1 cup shredded carrots
05 - 1 medium cucumber, thinly sliced
06 - 1 medium tomato, thinly sliced
07 - 1 small red bell pepper, thinly sliced
08 - 1/4 small red onion, very thinly sliced (optional)

09 - 1/4 cup fresh mint or parsley, chopped
10 - 1/4 cup crumbled feta cheese (optional, omit for vegan)
11 - 2 tablespoons pitted Kalamata olives, chopped (optional)
12 - Freshly ground black pepper, to taste
13 - Lemon wedges, for serving

# Directions:

01 - Lay each tortilla or flatbread flat on a clean work surface.
02 - Evenly spread approximately 3 to 4 tablespoons of hummus over each wrap, leaving a small border around the edges to prevent spilling.
03 - Distribute spinach or mixed greens, shredded carrots, cucumber slices, tomato slices, bell pepper slices, and red onion evenly across each wrap.
04 - Sprinkle each wrap with fresh herbs, crumbled feta cheese, and chopped Kalamata olives if using. Season with freshly ground black pepper to taste.
05 - Gently roll up each wrap, tucking in the sides to fully enclose the fillings. Slice diagonally in half for easier handling.
06 - Serve immediately with lemon wedges on the side for squeezing over the wraps.
