→ Toppings

17 - 1 cup shredded cheddar cheese
18 - 1 cup cherry tomatoes, halved
19 - 1/2 cup canned black beans, drained and rinsed
20 - 1/4 cup sliced green onions
21 - 1/4 cup chopped fresh cilantro
22 - 1 medium avocado, sliced
23 - 1/2 cup sour cream (or Greek yogurt)
24 - Lime wedges, for serving

# Directions:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Toss diced potatoes with olive oil, smoked paprika, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes, stirring halfway, until golden and crispy.
03 - While potatoes roast, heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 5 minutes.
04 - Add diced onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute more.
05 - Stir in chili powder, cumin, oregano, smoked paprika, salt, and pepper. Mix well.
06 - Add tomato paste and stir to coat the beef. Pour in beef broth or water, reduce heat to medium, and simmer for 3-4 minutes until thickened.
07 - Divide roasted potatoes among four bowls. Top each with ground beef mixture.
08 - Add cheese, cherry tomatoes, black beans, green onions, cilantro, avocado, and a dollop of sour cream. Serve with lime wedges.

# Expert Tips:

01 -
  • The roasted potatoes get irresistibly crispy and hold up perfectly under all those toppings
  • Everything hits the table warm at once, so everyone can customize their own bowl
  • Leftovers somehow taste even better the next day when flavors have melded
02 -
  • Cutting the potatoes into evenly sized pieces is crucial so they all finish roasting at the same time
  • Don't overcrowd the baking sheet or the potatoes will steam instead of getting crispy
  • Let the beef mixture cool slightly before assembling so the sour cream doesn't melt immediately
03 -
  • Prep all your toppings before you start cooking so assembly happens quickly once everything is hot
  • Warm your tortilla chips in the oven for the last 2 minutes of potato roasting time
  • Squeeze fresh lime juice over the beef mixture right before assembling for an extra layer of brightness
