01 - In a large pitcher, combine the coconut water, orange juice, grated ginger (if using), lime juice, and honey or maple syrup. Stir thoroughly until fully blended.
02 - Taste the mixture and adjust sweetness or acidity level as needed by adding more honey or lime juice.
03 - Fill two glasses with ice cubes to the top.
04 - Pour the coconut-orange mixture over the ice in each glass. Garnish each glass with an orange slice and a few fresh mint leaves.
05 - Serve immediately while chilled.
