02 - 1 cup boiling water
03 - 1 cup cold pineapple juice

05 - 1 cup mini marshmallows
06 - 2 cups sweetened shredded coconut, divided

# Directions:

01 - Combine gelatin dessert mix and boiling water in a large mixing bowl. Stir continuously for 2 minutes until fully dissolved.
02 - Pour in cold pineapple juice and blend thoroughly.
03 - Refrigerate mixture for 60 to 90 minutes until thickened but not fully set.
04 - Gently mix in chopped nuts, mini marshmallows, and 1 cup of the shredded coconut until evenly distributed.
05 - Return bowl to the refrigerator and chill for an additional 30 to 40 minutes, until the mixture is firm enough to handle.
06 - With clean hands, portion and roll the mixture into 1-inch balls. Coat each ball by rolling in the remaining 1 cup shredded coconut.
07 - Arrange the coated balls on a parchment-lined tray. Refrigerate at least 30 minutes before serving.
