01 - In a mixing bowl, blend softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
02 - Place an egg roll wrapper on a clean surface in a diamond orientation, with a corner facing you.
03 - Spread 1 to 1.5 tablespoons of cheesecake mixture horizontally across the center of the wrapper. Spoon 1 tablespoon of cherry pie filling on top.
04 - Fold the bottom corner over the filling, tuck in the sides, brush the edges with beaten egg, and roll tightly to enclose the filling. Repeat with remaining wrappers.
