13 - 1 tbsp hoisin sauce
14 - 1 tbsp water
15 - 1 tsp brown sugar
16 - 1 tsp cornstarch

→ For Cooking

17 - 2 tbsp vegetable oil

# Directions:

01 - Combine beef slices with soy sauce, cornstarch, Shaoxing wine, and sesame oil in a medium bowl. Mix thoroughly and marinate for 10 minutes.
02 - Whisk together all stir fry sauce ingredients in a small bowl until smooth. Set aside for later use.
03 - Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add marinated beef and stir fry for 1-2 minutes until browned. Remove from pan and set aside.
04 - Add remaining 1 tablespoon oil to the pan. Stir fry garlic and ginger for 30 seconds until fragrant.
05 - Add carrots and snow peas to the pan. Stir fry for 2-3 minutes until vegetables are tender yet still crisp.
06 - Return beef to the pan. Pour in stir fry sauce and toss everything together for 1-2 minutes, allowing sauce to thicken and coat all ingredients evenly.
07 - Remove from heat immediately. Garnish with sliced spring onions if desired. Serve hot with steamed rice or noodles.

# Expert Tips:

01 -
  • Marinating the beef in cornstarch creates that silky tender texture you get in restaurant stir fries
  • The high heat cooking keeps vegetables crisp and bright while building deep flavor in minutes
02 -
  • Crowding the pan drops the temperature and creates steam instead of sear, so cook in batches if your wok is not large enough
  • Having all ingredients prepped and the sauce mixed before you turn on the heat is essential, because stir fry moves too fast for last minute chopping
03 -
  • Freeze the beef for 20 minutes before slicing to make cutting thin strips much easier and more uniform
  • Dry your beef thoroughly with paper towels before marinating, because excess moisture prevents proper searing
